Ingredients
  • 100g Liberto Edamame Fettuccinecooked, cooled and dressed with mustard dressing
  • 1large handful Salad greens
  • 2tbsp HummusTopped with sprouted beans
  • 6 Cherry tomatoes
  • 1handful Shredded cabbage
  • 50g Vegan cheese, cubedWe used coconut cheese
  • 50g Roasted Butternut squashCut into cubes
  • 75g Mixed wholegrains or legumesWe used a mix of chickpeas, spelt and bulgur wheat
Instructions
  1. Simply add the ingredients to a large bowl of your choice! Feel free to substitute for your favourites or any leftovers in your fridge.
