Miso, Tofu & Edamame Noodle Soup
This super healthy soup is ready in under 15 minutes, our edamame spaghetti works perfectly as a high fibre, high protein noodle.

Ingredients

Miso soup mix
250
ml
boiling water
3
whole
sugar snap peas
3
whole
mini sweetcorn
3
whole
chestnut mushrooms
2
stems
asparagus
50
g
Liberto Edamame spaghetti
50
g
silken tofu
cut into 2cm square pieces
Instructions
Start by getting all your ingredients ready to use.
Cook the noodles for 3 minutes in boiling water, drain.
In a pan heat the miso soup paste with 250ml water.
Finely chop the vegetables, add to the miso broth for 3 minutes.
Pour the broth into a bowl, add the noodles and top with tofu.
Serve immediately.
