Miso, Tofu & Edamame Noodle Soup
This super healthy soup is ready in under 15 minutes, our edamame spaghetti works perfectly as a high fibre, high protein noodle.

Ingredients
  • 1sachet Miso soup mix
  • 250ml boiling water
  • 3whole sugar snap peas
  • 3whole mini sweetcorn
  • 3whole chestnut mushrooms
  • 2stems asparagus
  • 50g Liberto Edamame spaghetti
  • 50g silken tofucut into 2cm square pieces
Instructions
  1. Start by getting all your ingredients ready to use.
  2. Cook the noodles for 3 minutes in boiling water, drain.
  3. In a pan heat the miso soup paste with 250ml water.
  4. Finely chop the vegetables, add to the miso broth for 3 minutes.
  5. Pour the broth into a bowl, add the noodles and top with tofu.
  6. Serve immediately.
